SAAG PRAWN MAGHI (Ind) ~~~~~~~~~~~~~~~~~~~~~~~~ Preparation 15 mins Cooking time 15 mins Serves: Not indicated. Probably 2 to 4 Ingredients ~~~~~~~~~ 1 tbsp Oil 1 Red pepper - deseeded and chopped 1 Onion - chopped 2.5cm/1in Fresh ginger - peeled and cut into thin strings 1 clove Garlic - peeled and chopped 1 tsp Ground corriander 1 tsp Cummin seeds 1 tsp Turmeric (Yellow - known also as Haldi, Kurkuma) 2 tbsps Lemon juice - fresh 100g/4oz Spinach - fresh 225g/8oz Large raw peeled prawns (Eng=King prawns/Am=shrimp) Method ~~~~~~ Heat the oil in a large heavy based frying pan Cook the onion and red pepper at moderately high heat 3-4 mins until softened Add the ginger and garlic and continue to cook for a further 2-3 mins Add all the spices and cook for 2 mins Add the lemon juice, prawns and spinach Tossing occasionally, stir fry for a further 5 mins until the spinach has wilted and the prawns are piping hot. Serve spooned over basmati rice Tips/Notes: ~~~~~~~~~~ Red pepper = capsicum (Aus), bell pepper (Am). Paprika or sweet paprika (Eur) Ground corriander is obviously dried.
