CORSICAN RECIPES - CUISINE CORSE Corsican Country Soup Minestra (Soupe Paysanne) ~~~~~~~~~~~~~~~~~ Makes 8 servings This is the most famous of all the Corsican soups. Shepherds would take some leftover with them into the mountains to eat cold. Besides the vegetables in the recipe below (the potatoes and tomato from the New World), some cooks also use carrots, celery, zucchini, leeks, and dandelion depending on the season. Ingredients ~~~~~~~~~ 1/4 lb Pork fat, chopped 2 lbs Boiling potatoes - Peeled and diced 1 sm head Cabbage (about 1 1/ 2 pounds) - Cored and chopped 3/4 lb Swiss chard leaves (no white part) - Chopped 1 med Onion - Chopped 2 large Garlic cloves - finely chopped 6 cups Water 1/2 lb Red kidney beans (about 1 cup) 1 Ham or smoked bacon chunk with bone (about 1/ 2 pound) 1 large Tomato (about 10 oz) - Peeled, seeded and chopped 6 slices Day-old French country bread (or 1/ 4 lb lasagne sheets) 1 tblsp Salt Freshly ground black pepper to taste Extra virgin olive oil for drizzling Method ~~~~~~ 1. Cook the pork fat over medium-high heat in a large casserole or soup pot until there is some fat in the bottom of the pot (about 5 mins) 2. Add the potatoes, cabbage, chard, onion, and garlic until the greens are wilted, (about 5 mins). 3. Pour in the water, bring to a boil, then reduce the heat to low, adding the beans, ham or smoked bacon, and tomato. 4. Cook until the beans are tender (2-3 hrs) 5. Add the slices of bread (or lasagne) and continue to cook until a spoon can stand upright in the center of the soup or, if using lasagne, the pasta is tender. (about 15 mins). 6.Season with salt and pepper, drizzle with olive oil, and serve. [By Clifford A Wright - see more of his dishes at Cliffordawright.com] * Swiss Chard leaves - description and picture http://www.hort.purdue.edu/ext/senior/vegetabl/swisschard1.htm ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ CORSICAN FIG JAM ~~~~~~~~~~~~~~~~~ Ingredients: 1.5 lb Fresh figs (washed, stemmed and quartered) 1.5 lb Sugar (preferably brown) 3 drops Vanilla extract 1 small Lemon (washed, halved lengthwise, seeded and thinly, thinly sliced - optional) Method: Put figs, sugar and lemon slices into jam pot (or medium-sized heavy pot). Stir well. Cover, and let sit at room temperature for 3 hrs. Then bring the mix to a boil over medium-high heat until jam is dark and syrupy. (about 12 to 14 mins / 220f) - STIR OFTEN. Whilst this is cooking, sterilize your canning jars (2 1-pint jars), the ring bands and the lids by boiling them for 10 mins in a large pot. Remove from hot water and wipe dry. Fill each jar with the jam (leave about 1/4 inch below rim). Wipe rims to make sure no jam is left which would prevent a good sterilization process. Place lid on jars and screw on the ring bands. Gently transfer the canning jars to a canning rack and into a pot of boiling water. Ensure the jars are covered with about 1" of boiling water. Leave for 10 mins (water gently boiling). Remove jars from boiling water with tongs. Allow to cool for 24 hrs, undisturbed. Provided you went through the sterilization process seriously, your two jars should keep for a few months. If not then keep in the fridge and eat within 4 weeks. A good test to know if your jars are well sealed is to press on centre of lids. If the lid stays down, it's sealed. Serving suggestions: Drizzle it over goat cheese, cow's milk cheese. You can enjoy it on whole wheat bread for a healthy mid-afternoon snack. Contains sugar.
