Aji de Queso (Cheese sauce) =========================== Ecuador, Latin America and Spain INGREDIENTS: 1 Tomato - large, peeled, seeded, and coarsely chopped 1 Fresh Red pepper 1/2lb Spanish fresh cheese (queso blanco, queso fresco or ricotta) Salt (personally I never use where possible) Freshly ground pepper 1 med Onion - finely chopped 1 Egg - hardboiled and chopped METHOD: Combine the tomato, pepper, and cheese and reduce to a puree in a food processor. ***Be careful not to overblend*** Season to taste with salt and peper and put in a bowl.
