Warm Salad of Queenies ~~~~~~~~~~~~~~~~~~~~~~ Serves 4 as a starter. 1lb Queenies -shelled (scallops). 8 Green lipped mussels. 4 Good handfuls of rocket/lollo rosso. 3 oz Fresh ginger. 4 fl oz Whiskey. 1 tblsp Soy sauce. 2 tblsp Virgin olive oil. First rinse the scallops and put on one side. Then rinse the leaves and place on 4 plates and chill. Peel the ginger and cut in half. With one half cut the ginger into matchstick size pieces and blanch for 30 seconds. Then plunge in cold water and put to one side. Grate the remaining ginger and put into a small pan with the whiskey. Bring to the boil then add the scallops and mussels and poach with the lid on for 3 minutes. Drain the fluid from the pan into a small bowl and mix with the olive oil. Arrange the scallops and mussels on top of the salad and scatter the ginger matchsticks on top.
