MEDITERRANEAN HALIBUT - From Don, Perth (Serves 4) Can also be made with cod 4 Italian Plum Tomatoes (peeled,de-seeded,diced) 2 tb chopped kalmata olives Qtr cup drained capers 1 tsp minced garlic 3 tb olive oil, divided 3 tb fresh lemon juice, divided qtr cup dry white wine half cup crumbled feta cheese, divided 2 tb minced shallots 2 tb chopped fresh basil salt and freshly ground pepper 4 halibut fillets (kilo) In glass bowl, combine tomatoes, olives, capers, garlic, 2 tb of the olive oil, 1.5 tb of the lemonjuice, wine, qtr cup of the feta, shallots, basil, and salt and pepper to taste. Let stand at room temperature. Preheat oven to 425 degrees. Brush bottom of shallow baking pan with remaining 1 tb olive oil. Season both sides of halibut with salt and pepper to taste. Place in prepared baking pan. Squeeze remaining 1.5 tb lemon juice over halibut and top with tomato mixture. Sprinkle with remaining qtr cup feta. Bake until just cooked through, about 15 minutes. Arrange halibut on individual serving plates and spoon pan juices on top. Other similar fish can be used instead e.g. cod or snapper. From Don, Perth
