Seafood Cannelloni - Serves 2 ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ - Preparation Time 10 to 30 mins - Cooking Time 10 to 30 mins Ingredients 1 haddock fillet 100g/4oz prawns (or shrimp) 6 fresh lasagne sheets 75g/3oz breadcrumbs For poaching the haddock: 300ml/˝pt full-fat milk 25g/1oz fresh dill 5g/1tsp Dijon mustard salt and freshly ground black pepper For the onion sauce: ˝ onion, sliced thinly 600ml/1pt full-fat milk 75g/3oz plain flour 75g/3oz unsalted butter 10g/2tsp Dijon mustard salt and freshly ground black pepper Method 1. In a medium saucepan gently heat the milk for poaching the haddock. 2. Take the skin off the haddock. Cut the haddock in small pieces and place in milk. 3. Add the dill and mustard to the pan, season and simmer. 4. While the haddock is poaching (about 8 minutes) make the onion sauce. 5. To make onion sauce, heat the milk in a medium saucepan. Add the onion. 6. In a medium bowl fork the butter and flour together to form a paste. Add the paste to the hot milk, a little at a time, whisking to mix. 7. Stir in the Dijon mustard and seasoning. 8. Remove the haddock from the pan and transfer to a large bowl. 9. Add the prawns to the haddock and 45ml/3tbsp onion sauce. Stir. 10. Spoon a little haddock and prawn mixture into the middle of one lasagne sheet and roll to form cannelloni. Repeat, reserving 4tbsp of the haddock and prawn mixture for the stuffed serrano (see separate recipe). 11. When six cannelloni are formed place in a small heatproof casserole dish. Top with onion sauce (reserving 45ml/3tbsp for the mint and pea soup and 30ml/2tbsp for the stuffed serrano [see separate recipes]) and breadcrumbs. 12. Bake in a hot oven for 8–10 minutes.
