Ratatouille made easy (Serves 6) 4 Small Aubergines (egg plants) 2 tbsp Olive oil 1 lge Onion - chopped 3 cl Garlic - crushed 1 tbsp Basil - chopped 1 green Pepperoni (Pepper) - seeded/strips 1 red Pepperoni - same 1 Zucchini - sliced 1 yellow Squash - sliced 4 Tomatoes (plum peeled & chopped) 1 can Tomato puree 1 cup Red wine Cut aubergine into 1/2" slices, then cube Saute onion and garlic in olive oil until tender. Add aubergine cubes Cook until aubergine starts to stick to pan Add red wine, then remaining ingredients. Simmer until vegetables are tender. Serve as side dish or over pasta.
