Grilled Cod with Beer, Bacon and Cabbage - Country fare Now hear is a hearty tasty meal which is lovely to eat without being full of the "bad" things Grilled Cod with Beer, Bacon and Cabbage Takes 1hr Serves 4 ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Ingredients: Cod, Butter, Cabbage, Oil, Onion, Garlic, Chicken stock, Beer, Parsley, Black pepper Sea salt, S&P. 1. Salt cod heavily skin-side down. 2. Leave 20mins then rinse. 3. Melt 25gr butter, brush cod with a little of it and season with salt & pepper. 4. Put Cabbage in large salted boiling water and bring back to boil. Drain and refresh under cold running water. 5. High heat oil in heavy pan, fry bacon until crisp. Add rest of melted butter, onion & garlic and fry 5min until onion slightly brown. 6. Add chicken stock & beer and reduce liquid by ¾ over high heat. Add cabbage and rest of butter and cook gently until cabbage tender. Season to taste, add parsley Keep warm. 7. High heat grill & grill cod 8 mins on one side only until skin crisp and fish cooked. 8. Put cabbage in 4 large soup plates, spinkle cod with sea salt & coarsely ground black pepper & chopped parsley. Place on cabbage and serve Equipment: Pans for melting butter, boiling cabbage and heavy pan for bacon etc. How much of each ingredient? Well enough for 4 persons.
